Almond Chocolate Cake

Ingredients

  • 125g butter
  • 3/4 cup castor sugar
  • 6 separated eggs
  • 125g grated dark chocolate
  • 2 cups (250g) ground almonds
  • 1/3 cup stale white breadcrumbs
  • 90g dark chocolate
  • 30g butter

Directions

1. Grease a deep 23cm round cake pan, line base with paper; grease paper.
2. Cream butter and sugar in small bowl with electric mixer until light and fluffy, add egg yolks, beat well.
3. Transfer mixture to large bowl, stir in chocolate, almonds and breadcrumbs.
4. Beat egg whites until soft peaks form, fold through almond mixture in 2 lots.
5. Pour into prepared pan, bake in moderated oven about 50 minutes. Stand 5 minutes before turning onto wire rack to cool.
6. Melt extra 90g chocolate and 30g butter over hot water, cool before spreading over cake.

Recipe Notes-
This cake can be kept refrigerated for up to 3 days. The un-iced cake can be frozen for up to 2 months. This recipe is unsuitable to microwave.


Servings

Makes one - 9inch (23 cm) loaf
