Microwaved Chocolate Cake

Ingredients

  • 175 g / 6 oz. self-raising flour
  • 6 Tbsp cocoa powder
  • 175 g / 6 oz. dark brown sugar
  • 175 g / 6 oz. softened margarine
  • 1/4 pint sour cream
  • 6 Tbsp ground almonds
  • 5 Tbsp honey
  • 1 tsp vanilla extract
  • 3 lightly beaten eggs

Directions

1. Lightly grease a microwave safe baking pan.
2. Sieve together the flour and cocoa powder, set aside.
3. In a large mixing bowl, cream the margarine and sugar until soft and fluffy.
4. Gradually beat in eggs then the honey and sour cream.
5. Add vanilla essence to the mixture and mix well.
6. Then add the previously sieved flour and cocoa powder. Mix well untill incorporated.
7. Spoon the mixture into the microwave baking pan.
8. Microwave on HIGH for 8 to 10 minutes or untill center springs back when touched lightly.
9. Let stand for 5 to 10 minutes. Cool slightly and serve.

Recipe Notes
1. You can replace the sour cream with the same quantity of yougurt.
2. You can adjust the cooking time and settings according to the time your microwave take for cooking chocolate cakes.


Servings

One 8-inch baking pan.
